For this reason, we have joined the Sustainable Restaurant Program promoted by Friend of the Sea, the only internationally recognised and supervised certification program for sustainable fishing.
Once selected, each type of fish used to create our dishes is blast chilled at -20°C in professional freezers to eliminate any possible presence of bacteria or parasites.
The thawed fish is served on the same day to preserve its freshness, as if it had just been caught.
